A warm, comforting baked blueberry oatmeal with a slightly chewy top and creamy interior, studded with jammy blueberries. Perfect for meal prep and busy mornings.

Ingredients

Scale
  • 2 cups old-fashioned rolled oats
  • 1 ½ cups milk (whole, 2%, or oat milk)
  • 2 large eggs (room temperature)
  • ⅓ cup pure maple syrup
  • 2 tablespoons unsalted butter, melted (or coconut oil for dairy-free)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon (optional)
  • ¼ teaspoon salt
  • 1 ½ cups fresh or frozen blueberries
  • Optional toppings: extra blueberries, sliced almonds, maple syrup, Greek yogurt

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish or line with parchment paper, leaving overhang for easy removal.
  2. In a large mixing bowl, whisk together milk, eggs, maple syrup, melted butter, and vanilla extract until smooth and slightly frothy, about 30 seconds.
  3. In a separate small bowl, combine oats, baking powder, cinnamon, and salt. Stir with a fork to evenly distribute the baking powder.
  4. Pour dry ingredients into wet ingredients and stir until just combined (10-12 strokes). Batter will be thin and slightly lumpy.
  5. In a small bowl, toss blueberries with 1 tablespoon of the maple syrup (taken from the measured amount). Let sit for 2-3 minutes to macerate.
  6. Gently fold blueberries into the batter with a spatula, being careful not to crush them. Reserve a few blueberries for topping if desired.
  7. Pour mixture into prepared baking dish and spread evenly. Press reserved blueberries gently into the surface.
  8. Bake for 35-40 minutes, until top is golden brown and oatmeal is set. Center should jiggle slightly but not be liquid. A toothpick inserted in center should come out with moist crumbs.
  9. Let cool in the pan for at least 10 minutes before serving to allow oatmeal to set.
  10. Serve warm with optional toppings like extra blueberries, a drizzle of maple syrup, or a dollop of Greek yogurt.

Notes

For best texture, use old-fashioned rolled oats, not quick-cooking or steel-cut. Let blueberries macerate in maple syrup for a few minutes to create jammy swirls. Allow oatmeal to cool for 10 minutes before serving to set properly. Leftovers keep in the refrigerator for up to 5 days and reheat well.
