Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. Brown the butter: Place the butter in a small saucepan over medium heat. Stir occasionally as it melts. It will foam and bubble. After a few minutes, golden brown specks will form at the bottom and the butter will smell nutty. Once it reaches a deep amber color, remove from heat immediately and pour into a heatproof bowl. Let cool for 5-10 minutes.
  3. Mash the bananas: In a medium bowl, mash the bananas with a fork until smooth. A few small lumps are fine. You should have about 1 cup.
  4. Mix the wet ingredients: To the mashed bananas, add the pumpkin puree, both sugars, eggs, vanilla extract, and the cooled brown butter. Whisk until smooth and well combined.
  5. Combine the dry ingredients: In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves until no lumps remain.
  6. Fold the wet into the dry: Pour the wet ingredients into the dry ingredients. Use a rubber spatula to fold gently until no streaks of flour remain. A few small lumps are okay. Do not overmix.
  7. Fill the muffin cups: Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
  8. Add the topping: Sprinkle turbinado sugar and chopped nuts over the tops if using. Press them in gently.
  9. Bake: Place the muffin tin in the preheated oven. Bake for 16-18 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. The tops should be golden brown and spring back when lightly touched.
