  • 1 cup plain breadcrumbs
  • 1 medium yellow onion, finely diced
  • 2 large eggs
  • 1/2 cup whole milk
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 cup ketchup
  • 1/3 cup brown sugar, packed
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon mustard powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Finely dice the onion to the size of a grain of rice.
  3. In a large mixing bowl, combine ground beef, breadcrumbs, diced onion, eggs, milk, Worcestershire sauce, garlic powder, salt, pepper, and thyme. Mix with your hands until just combined.
  4. Lightly grease a 9×5-inch loaf pan with cooking spray or oil. Press the meat mixture into the pan evenly, or shape into a loaf on a rimmed baking sheet.
  5. In a small bowl, whisk together ketchup, packed brown sugar, apple cider vinegar, and mustard powder to make the glaze.
  6. Spoon about half of the glaze over the top of the meatloaf and spread evenly.
  7. Bake for 45 minutes.
  8. Remove from oven, spoon the remaining glaze over the top, and spread evenly.
  9. Return to oven and bake for another 15-20 minutes, until internal temperature reaches 160°F (71°C).
  10. Let the meatloaf rest for 10 minutes before slicing.
  11. Slice and serve warm.

Don’t overmix the meat to avoid a dense texture. Let the meatloaf rest for 10 minutes before slicing to allow juices to redistribute. For a gluten-free option, use gluten-free breadcrumbs and ensure Worcestershire sauce is gluten-free.
