Ingredients

Scale
  • 8 oz aged sharp cheddar
  • 4 oz soft goat cheese log
  • 6 oz manchego
  • 8 oz brie or camembert
  • 4 oz prosciutto
  • 4 oz sopressata or genoa salami
  • 3 oz speck or smoked ham (optional)
  • 46 fresh figs
  • 2 honeycrisp or fuji apples
  • 34 seckel pears
  • 1 cup red or green grapes
  • 1/2 cup marcona almonds or roasted pecans
  • 1/2 cup cornichons or pickled okra
  • 1/2 cup olives (castelvetrano preferred)
  • 1/4 cup fig jam or quince paste
  • Local honey for drizzling
  • 1/4 cup apple butter or pumpkin butter (optional)
  • 1 baguette, sliced and lightly toasted
  • 1 box crackers (mix of water crackers and seedy crackers)
  • 1 bundle breadsticks or grissini

Instructions

  1. Take cheeses out of the fridge 30-45 minutes before serving.
  2. Choose your board and place ramekins for jam, honey, olives, and nuts in a loose triangle pattern.
  3. Place cheeses in different spots around the board, leaving space between each.
  4. Add meats: fold prosciutto into ribbons or rosettes, roll salami slices into cylinders, and place near complementary cheeses.
  5. Fill in with fruits: tuck fig halves, fan out apple slices, place pear clusters, and drop grape clusters in empty spaces.
  6. Add crunchy elements: scatter almonds and pecans in small piles, place cornichons in a ramekin or corner, and add olives.
  7. Arrange bread and crackers: fan baguette slices along one edge, stack crackers in a pile, and lay breadsticks across the board.
  8. Drizzle honey over brie or goat cheese, spoon fig jam into its ramekin, and garnish with fresh rosemary sprigs or sage leaves.
  9. Step back and fill any gaps with extra grapes, nuts, or cracker pieces.
  10. Serve immediately or within an hour at room temperature.

Notes

Don’t overcrowd the board; use a second board if needed. Pair flavors intentionally: sharp cheddar with apple, goat cheese with honey and figs, manchego with quince paste, brie with prosciutto. Cut some things ahead but leave some whole for participation. Let everything come to room temperature. Use visual height by folding meat and stacking crackers. Sprinkle flaky sea salt over the finished board for extra flavor.
