A make-ahead cinnamon roll casserole with a creamy custard and cream cheese glaze, perfect for a stress-free Christmas morning breakfast.

  • 4 large eggs, room temperature
  • 1 cup (240 ml) heavy cream
  • 1/2 cup (120 ml) half-and-half
  • 1/4 cup (50 g) granulated sugar
  • 1 tablespoon vanilla bean paste (or pure vanilla extract)
  • 1 teaspoon ground cinnamon, plus more for sprinkling
  • 1/2 teaspoon freshly grated nutmeg
  • Pinch of kosher salt
  • 2 tablespoons unsalted butter, melted
  • For the cream cheese glaze: frosting packets from cinnamon roll cans, 2 oz (57 g) softened cream cheese, 2 tablespoons milk

Instructions

  1. Grease a 9×13-inch baking dish with the melted butter, ensuring corners and sides are coated.
  2. Open both cans of cinnamon rolls and set the frosting packets aside. Cut each cinnamon roll into 4 equal pieces using a sharp knife or kitchen shears. Scatter the pieces evenly in the prepared baking dish.
  3. In a large mixing bowl, whisk together the eggs, heavy cream, half-and-half, granulated sugar, vanilla bean paste, ground cinnamon, freshly grated nutmeg, and a pinch of salt until smooth and the sugar has dissolved, about 1 minute.
  4. Slowly pour the custard mixture evenly over the cinnamon roll pieces. Use a spatula to gently press down on the rolls so they soak up the custard. Sprinkle extra cinnamon on top if desired.
  5. Cover the dish with plastic wrap and refrigerate for at least 30 minutes, or up to overnight, to allow the rolls to absorb the custard.
  6. When ready to bake, preheat the oven to 350°F (175°C). Remove the casserole from the fridge and let it sit on the counter for about 15 minutes while the oven heats.
  7. Bake for 30-35 minutes, until the top is golden brown and the center is set but still slightly jiggly. A toothpick inserted in the center should come out clean or with a few moist crumbs. If the top browns too quickly, tent with foil for the last 10 minutes.
  8. While the casserole bakes, make the cream cheese glaze: In a small bowl, combine the reserved frosting packets, softened cream cheese, and milk. Whisk until smooth and pourable. Add more milk if needed.
  9. Let the casserole cool for 5-10 minutes on a wire rack. Drizzle the cream cheese glaze generously over the top. Serve warm.

Notes

For best texture, refrigerate overnight. Use room temperature eggs for smoother custard. Let casserole rest before glazing to prevent glaze from melting. If edges brown too quickly, tent with foil.
