This cozy cranberry orange sauce with fresh rosemary is a recreation of a beloved dish from a Vermont farm stand. It’s quick, easy, and perfect for holidays or weeknight meals, with a jammy texture and balanced sweetness.

  • 3/4 cup (150 grams) granulated sugar
  • 1 large navel orange, sliced into thin rounds
  • 2 sprigs fresh rosemary (about 4 inches each)
  • 1/2 cup (120 ml) water
  • 1 teaspoon vanilla extract (optional)
  • 1/8 teaspoon salt

Instructions

  1. Rinse fresh cranberries and pick out any soft or shriveled ones. Wash the orange thoroughly and slice into thin rounds about 1/4 inch thick. Set rosemary sprigs aside. Measure out sugar, water, vanilla, and salt.
  2. Add cranberries, sugar, water, orange slices, rosemary sprigs, vanilla extract, and salt to a medium saucepan. Stir to combine.
  3. Place saucepan over medium-high heat and bring to a rolling boil, about 3 to 4 minutes. Cranberries will start to pop.
  4. Reduce heat to medium-low to maintain a gentle simmer. Set a timer for 15 minutes.
  5. Stir every 3 to 4 minutes to prevent sticking. Cranberries will burst and release pectin, thickening the sauce. Orange slices will soften.
  6. After 15 minutes, check thickness: sauce should coat the back of a spoon and leave a clear path when dragged through. If too runny, simmer 2 to 3 more minutes.
  7. Use tongs to remove rosemary sprigs and any large orange peel pieces (optional). Leave softened orange slices in if desired.
  8. Remove from heat and let cool for at least 10 minutes. Sauce will continue to thicken as it cools. Serve warm, at room temperature, or chilled.

Notes

For a thicker, jam-like consistency, simmer an extra 5 minutes. For a thinner sauce, stick to 15 minutes. The sauce can be made up to 2 weeks ahead and stored in the refrigerator. Do not overcook the rosemary to avoid bitterness. Let sauce cool completely before judging thickness.
