  • 1.5 to 2 pounds boneless, skinless chicken breasts (about 3 large)
  • 4 cups low-sodium chicken broth
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 medium yellow onion, diced
  • 3–4 medium carrots, peeled and sliced into rounds
  • 2–3 stalks celery, sliced
  • 3–4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 tablespoon dried parsley
  • 2 bay leaves
  • Salt and black pepper to taste
  • 1 can (16.3 ounces) refrigerated biscuit dough (8-count, flaky layers like Pillsbury Grands!)
  • 1 cup frozen peas (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep the vegetables: dice the onion, slice the carrots and celery, and mince the garlic.
  2. Place the chicken breasts in the bottom of a 6-quart or larger slow cooker. Add the diced onion, sliced carrots, celery, and minced garlic on top.
  3. Pour in the 4 cups of low-sodium chicken broth.
  4. Spoon the entire can of cream of chicken soup over the top. Add the dried thyme, dried parsley, and bay leaves. Season with salt and pepper. Stir gently to combine.
  5. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the chicken is tender and easily shredded.
  6. Carefully remove the chicken breasts from the slow cooker and shred with two forks. Discard the bay leaves.
  7. Return the shredded chicken to the slow cooker and stir. Taste and adjust seasoning. If using, stir in the frozen peas.
  8. Cut each biscuit into quarters. Gently drop the dough pieces into the hot broth, pushing them down slightly to coat. Do not stir.
  9. Increase heat to HIGH, cover, and cook for 20-30 minutes, until the dumplings are puffed and cooked through (a toothpick inserted should come out clean).
  10. Turn off the slow cooker and let rest for 5-10 minutes before serving. Ladle into bowls and garnish with fresh parsley if desired.

Notes

For the juiciest chicken, cook on LOW. Do not stir the dumplings after adding them; they need to steam on top. If you prefer a thicker broth, make a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) and stir it in after shredding the chicken, then cook on HIGH for 10-15 minutes before adding dumplings. Canned biscuit dough is the secret to perfect dumplings; homemade dough may become dense and gluey.
