A creamy, hearty chicken and wild rice soup made in the slow cooker with tender chicken, nutty wild rice, and a rich broth. Perfect for cozy weeknight dinners and meal prep.

Ingredients

Scale
  • 1.5 pounds boneless, skinless chicken breasts
  • 1 cup wild rice blend, uncooked
  • 1 medium yellow onion, diced
  • 3 medium carrots, peeled and diced
  • 3 celery stalks, diced
  • 4 garlic cloves, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary, crushed
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Rinse the wild rice blend under cold water for about 30 seconds using a fine-mesh strainer. Shake off excess water and set aside.
  2. Dice the onion, carrots, and celery into small, even pieces. Mince the garlic.
  3. Place the diced vegetables and minced garlic in the bottom of a 6-quart slow cooker. Add the rinsed wild rice on top. Nestle the chicken breasts into the vegetables and rice, pushing them down slightly.
  4. Pour the chicken broth over everything. Add the dried thyme, crushed rosemary, bay leaves, salt, and black pepper. Gently stir, being careful not to disturb the chicken too much.
  5. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the rice is tender and the chicken shreds easily with a fork.
  6. About 30 minutes before serving, remove the chicken breasts from the slow cooker and shred with two forks. Return the shredded chicken to the slow cooker.
  7. Stir in the heavy cream. Let cook for another 15-20 minutes on LOW until heated through. Do not let it boil.
  8. Remove the bay leaves and discard. Taste and adjust salt and pepper if needed. Ladle into bowls, garnish with fresh parsley, and serve immediately.

Notes

Don’t peek! Every time you lift the lid, you add about 20 minutes to the cooking time. For a thicker soup, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir in after adding the cream. The soup thickens as it sits; add a splash of broth when reheating.
