  • 8 oz aged cheddar cheese, sliced
  • 8 oz brie cheese, wheel
  • 4 oz prosciutto, thinly sliced
  • 4 oz salami, sliced
  • 1/2 cup black olives, pitted
  • 1/2 cup marinated artichoke hearts, drained
  • 1 cup candy corn
  • 1/2 cup candy pumpkins (mellowcreme)
  • 1/2 cup pretzel sticks
  • 1/4 cup dark chocolate-covered almonds
  • 1/4 cup dried cranberries
  • 1 cup assorted crackers
  • Fresh rosemary sprigs
  • Black sesame seeds
  • Small cauldron or bowl

Instructions

  1. Prep your cheeses (5 minutes): Take the brie out of the fridge 30 minutes before assembling. Slice the aged cheddar into thin triangles or cubes. Place the brie wheel whole on the board. Optionally, score a small spiderweb pattern on top of the brie with a knife, then sprinkle black sesame seeds in the grooves.
  2. Arrange the meats (3 minutes): Fold the prosciutto slices into loose ribbons and place them in a cluster near the brie. Roll the salami slices into little cylinders or fold them into quarters. Group them together to form a ‘meat mountain.’
  3. Add the crackers and pretzels (2 minutes): Place small piles of crackers around the board in three different spots. Stick pretzel sticks upright in a small cup or lay them in a neat row.
  4. Fill the small bowls (3 minutes): Pour the candy corn into your cauldron or small bowl and place it in the center or off to one side. Fill another ramekin with black olives, and another with dried cranberries.
  5. Scatter the extras (4 minutes): Sprinkle the dark chocolate almonds and candy pumpkins in small gaps between the cheese and meat clusters. Tuck a few rosemary sprigs around the edges. Add the marinated artichoke hearts in a small pile near the salami.
  6. Final adjustments (3 minutes): Step back and look at your board. Fill any empty spaces with extra crackers or a few more candy pumpkins. The goal is to look abundant but not overcrowded. Add a small tag or sign that says ‘Eat if you dare’ for fun.

Notes

Take cheeses out of fridge 30 minutes before serving for best flavor. Keep candy corn in a separate bowl to prevent it from getting sticky. Assemble up to 2 hours in advance, but add candy corn and delicate garnishes just before serving. For dairy-free, use cashew-based soft cheese and vegan cheddar. For gluten-free, use rice crackers or veggie sticks instead of pretzels.
