  • 2 cups (180g) rolled oats
  • 1 cup (245g) pumpkin purée
  • 3/4 cup (180ml) milk (any kind)
  • 2 large eggs
  • 1/3 cup (80ml) maple syrup
  • 1/4 cup (60ml) melted coconut oil or butter, cooled
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (90g) chocolate chips (optional)
  • 1/2 cup (60g) chopped pecans or walnuts (optional)
  • 1/4 cup (40g) dried cranberries (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together pumpkin purée, milk, eggs, maple syrup, melted and cooled coconut oil (or butter), and vanilla extract until smooth.
  3. Add rolled oats, pumpkin pie spice, cinnamon, baking powder, and salt. Stir with a spatula until just combined. Do not overmix.
  4. If using, gently fold in chocolate chips, nuts, or cranberries. Reserve a few chocolate chips to press on top.
  5. Divide batter evenly among the 12 muffin cups, filling each to the top (about 1/3 cup per cup).
  6. Bake for 18-22 minutes, until tops are set and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  7. Let cool in the pan for at least 10 minutes. Then transfer to a wire rack to cool completely.
  8. Serve warm or at room temperature. Store leftovers in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.

Notes

For best texture, use rolled oats, not quick or steel-cut oats. Let the batter rest for 5-10 minutes before baking for a better texture. If the tops brown too quickly, tent with foil. For a vegan version, use flax eggs and plant-based milk. For gluten-free, use certified gluten-free oats.
