This creamy, velvety honeynut squash bisque is a happy accident turned family favorite. Roasted squash, coconut milk, and warm spices come together in under 45 minutes for the ultimate comfort food that even picky eaters love.

  • 2 lbs honeynut squash (about 4–5 small squashes)
  • 1 medium yellow onion, roughly chopped
  • 3–4 garlic cloves, smashed
  • 2 tablespoons olive oil
  • 4 cups low-sodium vegetable or chicken broth
  • 1/2 cup coconut milk or heavy cream
  • 1 tablespoon maple syrup (optional)
  • 1/4 teaspoon ground nutmeg
  • 1 pinch cayenne pepper
  • Salt and black pepper to taste
  • Optional toppings: toasted pumpkin seeds, swirl of cream or coconut milk, fresh thyme, drizzle of brown butter

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Wash honeynut squashes, halve lengthwise, and scoop out seeds. Place cut-side up on baking sheet.
  3. Drizzle cut sides with 1 tablespoon olive oil, season with salt and pepper. Add smashed garlic cloves to baking sheet. Roast 25-30 minutes until tender and caramelized.
  4. While squash roasts, heat remaining 1 tablespoon olive oil in a large pot over medium heat. Add chopped onion and cook 5-7 minutes until softened and translucent.
  5. Add broth, nutmeg, cayenne, and a pinch of salt to the pot. Bring to a gentle simmer.
  6. Remove squash from oven and let cool slightly. Add roasted squash and garlic to the simmering broth.
  7. Remove pot from heat. Blend soup until smooth using an immersion blender, or carefully blend in batches in a regular blender.
  8. Return pot to low heat. Stir in coconut milk or cream. Adjust seasoning with salt, pepper, or more cayenne. Add maple syrup if desired. Thin with extra broth if needed.
  9. Serve hot with desired toppings.

Notes

Don’t skip roasting—it concentrates the squash’s natural sweetness. For a thicker soup, simmer uncovered after blending. For a thinner soup, add more broth. The soup tastes even better the next day. If using a regular blender, let soup cool slightly and blend in batches, holding lid down with a towel to avoid splatters.
