This cozy Jiffy corn casserole bake with sour cream is a deceptively simple, budget-friendly side dish that combines sweet cornbread mix and tangy sour cream for an incredibly moist, almost pudding-like center with a lightly browned crust. Perfect for potlucks, holiday dinners, or any gathering, it’s a crowd-pleaser that disappears fast.

Ingredients

Scale
  • 2 boxes (8.5 oz each) Jiffy Corn Muffin Mix
  • 1 cup (2 sticks) unsalted butter, melted
  • 1 cup sour cream, room temperature
  • 2 large eggs, room temperature
  • 1 can (15.25 oz) whole kernel corn, drained
  • 1 can (14.75 oz) cream-style corn
  • ½ teaspoon salt
  • ¼ teaspoon black pepper (optional)
  • ½ cup shredded cheddar cheese (optional topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, whisk the eggs until the yolks and whites are fully combined.
  3. Add the melted butter and sour cream. Whisk until smooth and creamy.
  4. Stir in both boxes of Jiffy Corn Muffin Mix. Mix until just combined; a few small lumps are okay.
  5. Fold in the drained whole kernel corn and the undrained cream-style corn. Stir gently until evenly distributed.
  6. Season with salt and optional black pepper. Give it one final stir.
  7. Pour the batter into the prepared dish and spread evenly.
  8. Bake for 40-45 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean or with a few moist crumbs. If adding cheese, sprinkle it on top during the last 10 minutes of baking.
  9. Let the casserole cool for 10 minutes before serving.

Notes

Room temperature ingredients matter for best texture. Don’t overmix the batter. Check for doneness early as oven temperatures vary. Let the casserole rest for 10 minutes before serving to allow the center to set. For a cheesy version, stir in 1 cup shredded cheddar into the batter or sprinkle on top. For a spicy twist, add diced jalapeño and green chiles. To make ahead, prepare batter up to 24 hours in advance and refrigerate; add 5-10 minutes to baking time.
