  • 1 box (8.5 oz) Jiffy Corn Muffin Mix
  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (15 oz) creamed corn
  • 2 large eggs
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup shredded sharp cheddar cheese
  • 1 can (4 oz) diced green chiles, undrained
  • 1/2 cup sour cream (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, combine the Jiffy Corn Muffin Mix, drained whole kernel corn, creamed corn, eggs, and melted butter. Stir until just combined (a few lumps are fine).
  3. Fold in the shredded cheddar cheese and undrained green chiles. If using sour cream, add it now and stir until just combined.
  4. Pour the batter into the prepared baking dish and spread evenly. Tap the dish gently on the counter to release air bubbles.
  5. Bake for 35 to 40 minutes, until the top is golden brown, edges pull away from the dish, and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  6. Let the casserole cool for at least 10 minutes before serving. Serve warm.

Notes

Don’t overmix the batter; lumps are fine. Use room temperature ingredients for best results. Shred your own cheese for smoother melting. Let the casserole rest after baking for clean slices. For a spicier version, add diced jalapeños or use pepper jack cheese.
