Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 2–3 fresh jalapeños, seeded and finely diced
  • 4 slices bacon, cooked crisp and crumbled
  • 1/4 cup chopped green onions
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 tablespoon fresh lime juice
  • Salt and black pepper to taste
  • 24–30 wonton wrappers
  • Olive oil spray or melted butter for brushing
  • Optional: Everything bagel seasoning or sesame seeds for topping

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly spray your mini muffin tin with non-stick spray.
  2. Cook the bacon: In a small skillet over medium heat, cook 4 slices of bacon until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate to drain, then crumble into small pieces. Let it cool.
  3. Make the filling: In a medium mixing bowl, combine the softened cream cheese, shredded cheddar, diced jalapeños, crumbled bacon, chopped green onions, smoked paprika, garlic powder, and lime juice. Mix until well combined and creamy. Adjust salt and pepper to taste.
  4. Prepare the wonton wrappers: Take one wonton wrapper and gently press it into a cup of the muffin tin, letting the edges fan out like a little star. Repeat for all cups.
  5. Fill the cups: Spoon about 1 tablespoon of the cream cheese mixture into each wonton cup. Do not overfill.
  6. Create the mummy look: Take another wonton wrapper and cut it into thin strips, about 1/2-inch wide. Lay 2-3 strips across the top of each filled cup, crossing them slightly to mimic mummy bandages. Press the ends gently into the edges of the bottom wrapper. If the strips don’t stick, dab a tiny bit of water on the ends to seal them.
  7. Brush with oil or butter: Lightly brush the tops of the wonton strips with olive oil or melted butter. If using everything bagel seasoning, sprinkle it on now.
  8. Bake: Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until the wonton wrappers are golden brown and crispy, and the filling is bubbly and hot.
  9. Cool slightly and serve: Let the mummy bites cool in the tin for 2-3 minutes before carefully removing them with a small spatula or fork. Serve warm, with a side of ranch dressing or sour cream for dipping if desired.

Notes

Don’t skip the cooling step—let them rest 2-3 minutes before removing from the tin. Wear gloves when handling jalapeños. Keep wonton wrappers covered with a damp paper towel to prevent drying. Bake on the middle rack for even browning. The filling can be made up to 2 days ahead.
