Ingredients

Scale
  • 2 cans (12.4 oz each) refrigerated cinnamon rolls (e.g., Pillsbury Grands!)
  • 4 large eggs, room temperature
  • 1 cup heavy cream
  • ½ cup whole milk
  • ¼ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon (preferably Saigon)
  • Pinch of salt
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 2–3 tablespoons milk
  • ½ cup chopped pecans (optional)
  • ¼ cup raisins or dried cranberries (optional)
  • 2 tablespoons maple syrup (optional)

Instructions

  1. Grease a 9×13 inch baking dish with butter or non-stick spray.
  2. Open both cans of cinnamon rolls and set aside the icing packets. Cut each roll into quarters using a sharp knife or kitchen shears.
  3. Scatter the quartered rolls evenly in the prepared baking dish. If using pecans or dried fruit, sprinkle them over the rolls now.
  4. In a large mixing bowl, whisk together eggs, heavy cream, whole milk, granulated sugar, vanilla extract, ground cinnamon, and a pinch of salt until smooth and the sugar is dissolved.
  5. Slowly pour the custard over the cinnamon roll pieces, ensuring every piece is coated. Gently press down with a spatula to help absorption. Do not stir.
  6. Cover the dish tightly with plastic wrap or aluminum foil and refrigerate for at least 8 hours, or overnight (up to 12 hours).
  7. The next morning, preheat oven to 350°F (175°C). Remove the dish from the refrigerator and let it sit on the counter for about 15 minutes while the oven heats.
  8. Bake uncovered for 35-40 minutes, until the top is golden brown and the center is set but still slightly jiggly. A knife inserted in the center should come out clean.
  9. While the casserole bakes, make the cream cheese glaze: In a medium bowl, beat softened cream cheese until smooth. Add powdered sugar, vanilla extract, and 2 tablespoons of milk. Beat until smooth and creamy. Add more milk if a thinner glaze is desired.
  10. Let the casserole cool for 5-10 minutes. Drizzle the cream cheese glaze over the top. Optionally, microwave the reserved icing packets for 10 seconds and drizzle that as well. Serve warm.

Notes

For best texture, let the rolls soak overnight. If the top browns too quickly, tent with foil for the last 10 minutes. Let the casserole rest before serving to allow the custard to set. Double the glaze if desired.
