  • 2 tablespoons chopped pecans or walnuts (optional)
  • 1/4 cup granulated sugar
  • 2 tablespoons unsalted butter, cut into pieces
  • 2 tablespoons heavy cream (room temperature)
  • 1/4 teaspoon flaky sea salt (plus more for sprinkling)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Place a baking sheet on the middle rack to catch any drips.
  2. Make the apple filling: In a medium bowl, combine sliced apples, brown sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract. Toss until apples are evenly coated. Set aside.
  3. Prepare the crisp topping: In a small bowl, mix oats, flour, brown sugar, cinnamon, and salt. Add cold butter cubes and use your fingers or a pastry cutter to work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces. Stir in nuts if using. Refrigerate while making the caramel.
  4. Make the salted caramel sauce: In a small saucepan over medium heat, spread granulated sugar in an even layer. Let it melt undisturbed for 3-4 minutes, swirling occasionally once edges start to liquefy. Once deep amber, remove from heat and immediately whisk in butter pieces (it will bubble). Slowly whisk in heavy cream until smooth. Stir in flaky sea salt and vanilla extract. Set aside to cool slightly.
  5. Assemble the crisps: Divide apple mixture evenly between two 8-ounce ramekins or a small baking dish. Drizzle half of the salted caramel sauce over the apples. Sprinkle crisp topping evenly over the apples.
  6. Bake: Place ramekins on the prepared baking sheet and bake for 25-30 minutes, until topping is golden brown and filling is bubbly. If topping browns too quickly, tent loosely with foil for the last 10 minutes.
  7. Rest and serve: Let crisps cool for 5-10 minutes. Drizzle with remaining salted caramel sauce and sprinkle with extra flaky sea salt. Serve warm, preferably with vanilla ice cream or whipped cream.

Notes

For the crispiest topping, keep butter cold and refrigerate topping before baking. Watch caramel closely to avoid burning. Let crisps rest after baking to allow filling to set. Double the caramel sauce for extra drizzling.
