A quick and easy Thanksgiving-inspired charcuterie board featuring roasted turkey, tart cranberries, creamy cheeses, and crusty bread. Perfect for cozy gatherings, Friendsgiving, or a simple comfort-food evening.

  • 1 pound roasted turkey breast, sliced
  • 4–6 slices prosciutto
  • 4 ounces thinly sliced salami (optional)
  • 8 ounces brie cheese
  • 6 ounces aged cheddar
  • 4 ounces goat cheese log
  • 1 cup fresh cranberries
  • ½ cup dried cranberries
  • 2 tablespoons honey
  • 1 apple (Honeycrisp or Granny Smith), thinly sliced
  • 1 large crusty baguette, sliced into rounds
  • 8 ounces crackers (mix of buttery and whole wheat)
  • ½ cup toasted pecans
  • ¼ cup pumpkin seeds
  • ½ cup cornichons or pickles
  • ½ cup olives (kalamata or castelvetrano)
  • Fresh rosemary sprigs for garnish
  • Fresh thyme sprigs for garnish

Instructions

  1. Take brie and goat cheese out of fridge 30 minutes before assembling. Slice baguette into ½-inch rounds. Thinly slice apple and toss with lemon juice to prevent browning. Toast pecans in a dry skillet over medium heat for 3-4 minutes until fragrant.
  2. Place brie whole on board. Place cheddar wedge opposite brie. Crumble or slice goat cheese into rounds near brie. Space cheeses at 12, 4, and 8 o’clock positions.
  3. Fold turkey slices into loose ribbons or roll into cylinders; place near center of board. Fold prosciutto slices in half twice to create ruffled piles. Arrange salami in a fan pattern or pile casually.
  4. Set out small bowls for fresh cranberries, dried cranberries, honey, pickles, and olives. Scatter bowls around board, filling gaps between cheeses and meats.
  5. Arrange baguette slices in a row or fan along one edge. Place crackers in clusters around cheeses, overlapping slightly for a rustic look.
  6. Scatter apple slices around board, tucking between cheeses and meats. Sprinkle toasted pecans and pumpkin seeds into empty spaces.
  7. Garnish with rosemary and thyme sprigs. Drizzle honey over brie and goat cheese. Add a small spoon next to honey bowl. Fill any bare spots with extra crackers or pecans.

Notes

Let cheeses come to room temperature for best flavor. Don’t overcrowd the board; leave breathing room. Balance flavors and textures (creamy, crunchy, tart, savory, sweet, salty). Prep all ingredients before arranging. Make extra cranberry sauce if desired.
