This easy candy corn popcorn bark is a quick and delicious fall treat made with popcorn, candy corn, and white chocolate. It’s perfect for Halloween parties, pumpkin carving nights, or any autumn gathering.

Ingredients

Scale
  • 8 cups popped popcorn (about 1/3 cup unpopped kernels)
  • 1 cup candy corn (plus extra for topping)
  • 12 ounces white chocolate chips or melting wafers
  • 1 teaspoon coconut oil or vegetable shortening
  • Flaky sea salt for finishing
  • 1/2 cup salted peanuts or pretzel pieces (optional)
  • 1/2 cup dried cranberries (optional)

Instructions

  1. Pop the popcorn. Pop 8 cups of popcorn using your preferred method. Remove any unpopped kernels. Spread the popcorn on a large baking sheet lined with parchment paper. Let it cool completely while you prepare the other ingredients. This takes about 5 minutes.
  2. Prepare the candy corn. Measure out 1 cup of candy corn. Set aside 1/4 cup for topping later. The rest will go into the bark mixture. If your candy corn feels a little hard, let it sit at room temperature for 10 minutes to soften slightly.
  3. Melt the white chocolate. Place 12 ounces of white chocolate chips in a microwave-safe bowl. Add 1 teaspoon of coconut oil or shortening. Microwave in 30-second intervals, stirring between each, until completely smooth. This usually takes about 90 seconds total. Don’t rush this step—white chocolate burns easily.
  4. Combine the ingredients. Pour the melted white chocolate over the popcorn in a large bowl. Add the 3/4 cup of candy corn (reserving the rest for topping). Gently fold everything together with a spatula until the popcorn is evenly coated. Work quickly—the chocolate starts setting fast.
  5. Spread the mixture. Transfer the coated popcorn mixture back onto the parchment-lined baking sheet. Spread it into an even layer, about 1/2 inch thick. Don’t press too hard—you want some texture and air pockets. Sprinkle the reserved candy corn on top, gently pressing them into the chocolate.
  6. Add the finishing salt. Sprinkle a pinch of flaky sea salt over the entire bark. This step is crucial—the salt cuts through the sweetness and makes everything pop. Don’t skip it.
  7. Let it set. Allow the bark to set at room temperature for about 30 minutes. If you’re in a hurry, pop it in the refrigerator for 15 minutes. The white chocolate should be firm but not rock hard. You’ll know it’s ready when the bark lifts cleanly off the parchment.
  8. Break into pieces. Once set, break the bark into irregular pieces with your hands. Don’t use a knife—the rustic, broken edges look better and feel more homemade. Aim for 2 to 3-inch pieces.

Notes

If the white chocolate starts seizing or getting grainy, stir in another teaspoon of coconut oil. It usually smooths right out. Use room temperature popcorn to avoid melting the chocolate too quickly or causing it to seize. Work fast but gently to avoid crushing the popcorn. The flaky salt is crucial for balancing sweetness. Store in an airtight container at room temperature for up to 5 days; do not refrigerate. Can be frozen for up to 2 months.
