Easy Crockpot Garlic Cream Cheese Mashed Potatoes

These incredibly creamy and rich mashed potatoes are made entirely in the slow cooker with minimal effort. Roasted garlic and cream cheese create a luscious texture, making this the perfect hands-off side dish for holidays or busy weeknights.

  • 3 lbs Yukon Gold potatoes, peeled and cut into 1.5-inch chunks
  • 8 oz cream cheese, softened
  • 1 whole head garlic, top sliced off to expose cloves
  • 4 tbsp unsalted butter
  • 1/2 cup low-sodium chicken or vegetable broth
  • 1/2 cup whole milk, warmed
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Fresh chives or parsley for garnish (optional)

Instructions

  1. Wash and peel the Yukon Gold potatoes. Cut them into roughly 1.5-inch chunks, making them all the same size for even cooking.
  2. Take the whole head of garlic and slice off the top 1/4 inch to expose the cloves. Do not peel them.
  3. Place the potato chunks around the head of garlic in a 6-quart or larger slow cooker. Toss with salt and pepper. Pour the chicken broth over the top. Dot the potatoes with the 4 tablespoons of butter.
  4. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the potatoes are fork-tender.
  5. Using tongs, carefully remove the head of garlic from the crockpot. Let it cool for a minute, then squeeze the bottom of each clove to release the soft roasted garlic. Discard the papery skins.
  6. Add the roasted garlic cloves back to the crockpot. Use a potato masher to mash the potatoes right in the pot until you reach your desired consistency. For silky smooth potatoes, use a hand mixer on low speed for just 30 seconds.
  7. Add the softened cream cheese and warm milk. Stir vigorously until the cream cheese is completely melted and incorporated. Taste and add more salt and pepper if needed.
  8. Transfer to a serving bowl, garnish with fresh chives or parsley, and serve hot.

Notes

For best texture, do not overmix the potatoes. Warm the milk before adding to prevent the potatoes from seizing. These hold well on the ‘warm’ setting for up to an hour. To make ahead, cook the day before, cool, and reheat in the crockpot on low for 2-3 hours.
