Lightened-up charcuterie cups with crispy prosciutto, creamy whipped cheese, and fresh seasonal toppings. Perfect for Friendsgiving or any fall gathering.

  • 12 slices prosciutto (thinly sliced)
  • 4 oz cream cheese, softened (reduced-fat recommended)
  • 1/4 cup plain Greek yogurt
  • 1 tbsp honey
  • 1/2 tsp fresh thyme leaves
  • 1/4 tsp black pepper (freshly cracked)
  • 1/3 cup dried cranberries (unsweetened preferred)
  • 1/3 cup chopped pecans (toasted)
  • 1 small apple, thinly sliced (Honeycrisp or Fuji)
  • 1/4 cup pomegranate arils
  • Fresh rosemary sprigs (for garnish, optional)
  • Flaky sea salt (for garnish, optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly spray a 12-cup muffin tin with non-stick cooking spray.
  2. Press one slice of prosciutto into each muffin cup, molding to the sides to form a cup shape. Repeat with remaining slices.
  3. Bake prosciutto cups for 8-10 minutes, until crispy and golden brown. Watch closely to prevent burning.
  4. Let cups cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  5. In a medium bowl, beat together softened cream cheese, Greek yogurt, honey, fresh thyme, and black pepper until smooth and creamy.
  6. In a small skillet over medium heat, toast chopped pecans for 2-3 minutes, stirring frequently, until fragrant and lightly browned. Set aside to cool.
  7. Spoon about 1 tablespoon of cream cheese mixture into each cooled prosciutto cup.
  8. Top each cup with dried cranberries, toasted pecans, apple slices, and pomegranate arils.
  9. Garnish with fresh rosemary sprigs and a pinch of flaky sea salt, if desired. Serve immediately or refrigerate for up to 2 hours before serving.

Notes

For best texture, keep prosciutto cups and filling separate until serving. To re-crisp cups, bake at 350°F for 3-4 minutes. Toss apple slices in lemon juice to prevent browning. The cream cheese mixture can be made up to 2 days ahead.
