This spider web buffalo chicken dip started as a kitchen accident but has become a family favorite. It’s a creamy, spicy, and cheesy dip that looks impressive with thin, stretchy cheese strands resembling a spider web, perfect for game day or family movie night.

  • 8 oz cream cheese, softened to room temperature
  • 1 cup cooked shredded chicken (rotisserie chicken works great)
  • 1/2 cup buffalo sauce (Frank’s RedHot recommended)
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 1 1/2 cups shredded mozzarella cheese, divided (use whole milk low-moisture for best stretch)
  • 1/4 cup crumbled blue cheese (optional)
  • 1/4 cup chopped green onions (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Let cream cheese soften on the counter for about 15 minutes, or microwave for 10-15 seconds if in a rush.
  2. In a medium mixing bowl, combine the softened cream cheese, shredded chicken, buffalo sauce, and ranch dressing. Stir until well incorporated.
  3. Fold in 1 cup of the shredded mozzarella cheese and the crumbled blue cheese if using. Reserve the remaining 1/2 cup of mozzarella for the top.
  4. Transfer the mixture to an 8×8 baking dish and spread evenly with a spatula. Sprinkle the reserved mozzarella on top, covering the surface completely.
  5. Bake for 20-25 minutes, or until bubbly and the cheese on top is melted and starting to brown in spots. For a more pronounced spider web effect, bake an extra 2-3 minutes.
  6. Remove from the oven and let cool for 5 minutes. Garnish with chopped green onions.

Notes

For a milder version, use only 1/4 cup buffalo sauce and add a tablespoon of melted butter. To make ahead, prepare up to step 4, cover with foil, and refrigerate for up to 24 hours; add 5-10 minutes to baking time. For the best spider web effect, use whole milk low-moisture mozzarella and don’t overmix. Let the dip rest for 5 minutes after baking to avoid burning mouths and allow flavors to meld.
