Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, combine the cake mix, eggs, oil, and vanilla extract. Stir with a whisk or wooden spoon until a soft, slightly sticky dough forms. Do not overmix.
  3. Let the dough rest for 5 minutes to allow the flour to absorb the liquid.
  4. Pour the powdered sugar into a small bowl. Optionally, sift to remove lumps.
  5. Scoop the dough into 1.5-tablespoon-sized balls using a cookie scoop or spoon.
  6. Roll each dough ball generously in the powdered sugar, coating every surface. For best results, roll twice.
  7. Place the coated dough balls on the prepared baking sheets, spacing them about 2 inches apart.
