  • 1/3 cup (65g) granulated sugar
  • 2 tablespoons (25g) light brown sugar, packed
  • 1/2 cup (120g) pumpkin puree (not pumpkin pie filling)
  • 1/4 cup (60ml) vegetable oil
  • 1 large egg, at room temperature
  • 2 tablespoons (30ml) milk (any kind)
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: 1/3 cup chocolate chips, chopped pecans, or walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Line a six-cup muffin pan with paper liners or grease well.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, pumpkin pie spice, baking powder, baking soda, and salt until no lumps remain.
  3. In a separate small bowl or liquid measuring cup, whisk together pumpkin puree, vegetable oil, egg, milk, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients. Stir with a spatula or wooden spoon until just combined (a few streaks of flour are fine—do not overmix).
  5. If using add-ins, gently fold them in with about 10 strokes.
  6. Divide batter evenly among the six muffin cups, filling each about three-quarters full.
  7. Bake on the middle rack for 15 to 18 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let muffins cool in the pan for 5 minutes, then transfer to a cooling rack.

Notes

Do not overmix the batter—overmixing develops gluten and makes muffins tough. Room temperature ingredients emulsify better; warm cold egg in water for 5 minutes. Do not open oven door during first 12 minutes of baking to prevent sinking. Muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 3 months.
