  • 1 cup (90g) rolled oats
  • 2 tablespoons (20g) chia seeds
  • 3 tablespoons (48g) creamy unsweetened almond butter
  • 1 cup (240ml) milk (any kind)
  • 1/2 cup (120g) Greek yogurt (plain or vanilla)
  • 2 tablespoons (30ml) pure maple syrup
  • 1 teaspoon (5ml) vanilla extract
  • A pinch of salt
  • Optional toppings: sliced bananas, fresh berries, chopped nuts, extra almond butter, cinnamon

Instructions

  1. In a medium bowl or directly in your jars, combine 1 cup milk, 1/2 cup Greek yogurt, 2 tablespoons maple syrup, and 1 teaspoon vanilla extract. Whisk until smooth.
  2. Stir in 1 cup rolled oats, 2 tablespoons chia seeds, and a pinch of salt. Mix well.
  3. Spoon in 3 tablespoons almond butter. If thick, warm for 10 seconds in the microwave first. Stir until mostly incorporated.
  4. Divide the mixture evenly into four 8-ounce jars, leaving about an inch of space at the top.
  5. Screw on lids and refrigerate for at least 6 hours, preferably 8 to 12 hours overnight.
  6. In the morning, stir the oats. They should be thick and creamy. If too thick, add a splash of milk; if too thin, add a tablespoon of chia seeds and let sit for 30 minutes.
  7. Add toppings and serve cold, or let sit at room temperature for 10 minutes if preferred.

Notes

For best texture, use room-temperature milk and yogurt. Stir the jars halfway through soaking (about 2 hours in) to redistribute chia seeds. These oats keep well for up to 5 days in the fridge. Add toppings just before serving for freshness. For a warm version, microwave for 30-45 seconds.
