  • 1 box (3.4 oz) instant vanilla pudding mix
  • 1/4 cup canned pumpkin puree
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups powdered sugar
  • 1 tablespoon pumpkin pie spice

Instructions

  1. Line a large baking sheet with parchment paper. Measure 9 cups of Rice Chex cereal into a very large mixing bowl, picking out any broken pieces.
  2. In a small bowl, whisk together instant vanilla pudding mix, pumpkin puree, melted butter, pumpkin pie spice, cinnamon, and salt until smooth and glossy (about 30 seconds). If too thick, add 1 teaspoon of milk or water at a time until pourable.
  3. Pour the pumpkin spice coating over the cereal. Gently fold with a rubber spatula or clean hands until every piece is evenly coated.
  4. In a separate small bowl, whisk together powdered sugar and 1 tablespoon pumpkin pie spice until no lumps remain.
  5. Transfer coated cereal to a large resealable plastic bag. Pour the powdered sugar mixture over the top. Seal the bag with some air inside and shake vigorously for about 30 seconds until all pieces are coated.
  6. Spread the puppy chow in a single layer on the prepared baking sheet. Let it sit for 10-15 minutes to allow the coating to firm up.
  7. After resting, gently break apart any large clumps with your fingers. Serve immediately or store in an airtight container.

Notes

Use room temperature pumpkin puree and butter for a smooth coating. Do not overmix the pudding mixture. Let the puppy chow dry completely for the best crunchy texture. Store in an airtight container at room temperature for up to 1 week. Do not refrigerate.
