A healthier twist on classic deviled eggs, featuring a creamy Greek yogurt and light mayo filling, topped with crispy bacon and fresh chives. Perfect for potlucks, parties, or a protein-packed snack.

Ingredients

Scale
  • 6 large eggs, at room temperature
  • Water, enough to cover eggs by 1 inch
  • Ice, for ice bath
  • 3 tablespoons plain Greek yogurt
  • 1 tablespoon light mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon yellow mustard
  • 1 teaspoon white vinegar
  • Salt and freshly ground black pepper, to taste
  • Pinch of paprika, plus more for garnish
  • 4 slices bacon (thick-cut recommended)
  • 2 tablespoons fresh chives, finely chopped

Instructions

  1. Place eggs in a single layer in a saucepan and cover with cold water by 1 inch. Bring to a rolling boil over high heat. Cover, remove from heat, and let sit for exactly 10 minutes.
  2. Prepare an ice bath in a medium bowl. Transfer eggs to ice bath using a slotted spoon and let sit for at least 5 minutes.
  3. While eggs chill, cook bacon in a skillet over medium heat until crispy, about 6-8 minutes. Transfer to paper towels to drain, then crumble into small pieces.
  4. Peel eggs under running cold water. Pat dry with paper towels.
  5. Cut each egg in half lengthwise. Remove yolks to a small mixing bowl. Arrange egg white halves on a serving platter.
  6. Mash yolks with a fork until crumbly. Add Greek yogurt, light mayonnaise, Dijon mustard, yellow mustard, white vinegar, salt, pepper, and paprika. Mix until smooth and creamy. Adjust seasoning to taste.
  7. Spoon filling into a piping bag or zip-top bag with a corner snipped off. Pipe filling into each egg white half. Alternatively, use a spoon to dollop and swirl.
  8. Sprinkle crumbled bacon and chopped chives over filled eggs. Dust with paprika. Serve immediately or refrigerate until ready.

Notes

For perfect peeling, use older eggs (about a week old) and shock them in an ice bath. If filling is too thin, add more Greek yogurt. For best results, chill filled eggs for 15-20 minutes before serving to meld flavors. Store assembled eggs in an airtight container in the refrigerator for up to 2 days; do not freeze.
