  • 1 tablespoon olive oil
  • ¼ cup (60g) baking soda
  • Coarse sea salt (for sprinkling)
  • 1 cup (240ml) low-fat milk
  • 1 ½ cups (170g) sharp cheddar cheese, shredded
  • 2 tablespoons light cream cheese, softened
  • ½ cup (120ml) beer (light lager or pilsner)
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (110°F), honey, and active dry yeast. Stir gently and let sit for 5-10 minutes until frothy.
  2. Mix the dough: Add all-purpose flour, whole wheat flour, and salt to the yeast mixture. Stir with a wooden spoon until a shaggy dough forms. Drizzle in olive oil and continue mixing until it comes together.
  3. Knead the dough: Turn dough onto a lightly floured surface. Knead for 5-7 minutes until smooth and elastic. Add more flour if too sticky, a tablespoon at a time.
  4. First rise: Place dough in a lightly oiled bowl, cover with a clean kitchen towel, and let rise in a warm spot for about 20 minutes until puffed. Preheat oven to 425°F (220°C).
  5. Shape the bites: Punch down dough. On a floured surface, roll into a 1-inch thick rope. Cut into 1-inch pieces (about 40-50 bites).
  6. The baking soda bath: Fill a large pot with 6 cups water and bring to a boil. Carefully add baking soda (it will fizz). Reduce heat to a simmer. Drop pretzel bites in batches (10-12 at a time) and cook for 30 seconds. Remove with a slotted spoon and place on a parchment-lined baking sheet.
  7. Bake: Sprinkle boiled pretzel bites with coarse sea salt. Bake for 12-15 minutes until golden brown.
  8. Make the beer cheese dip: In a small saucepan over medium heat, warm low-fat milk and beer until steaming (do not boil). Reduce heat to low and whisk in shredded cheddar, cream cheese, Dijon mustard, garlic powder, salt, and pepper. Stir continuously until melted and smooth.
  9. Serve: Let pretzel bites cool for 2 minutes. Serve warm with beer cheese dip on the side.

Notes

Don’t skip the baking soda bath—it creates the signature brown, chewy crust. For the beer, use a light lager or pilsner; avoid hoppy IPAs. If the dip thickens as it sits, reheat gently with a splash of milk. For extra browning, add a tablespoon of brown sugar to the baking soda water.
