Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ½ cup black cocoa powder
  • ¼ cup Dutch-process cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup packed light brown sugar
  • 2 large eggs, at room temperature
  • ½ cup vegetable oil
  • 1 cup buttermilk, at room temperature
  • 2 teaspoons vanilla extract
  • ½ cup hot coffee
  • 1 cup unsalted butter, softened
  • 3 ½ cups powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • 2–3 tablespoons heavy cream
  • Pinch of salt
  • Black decorating gel or melted dark chocolate (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners. Bring eggs and buttermilk to room temperature.
  2. In a large bowl, whisk together flour, black cocoa powder, Dutch-process cocoa powder, baking soda, baking powder, and salt. Sift cocoa powders first if clumpy.
  3. In a separate large bowl, whisk together granulated sugar, brown sugar, eggs, vegetable oil, buttermilk, and vanilla extract until smooth, about 1 minute.
  4. Pour dry ingredients into wet ingredients and fold with a rubber spatula until just combined. Add hot coffee and gently fold until incorporated. Batter will be thin.
  5. Divide batter evenly among the 12 liners, filling each about ⅔ to ¾ full (about 65-70 grams per cupcake).
  6. Bake for 18-22 minutes, until a toothpick inserted in the center comes out with moist crumbs. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
  7. For frosting: Beat softened butter on medium speed until smooth and creamy, about 2 minutes. Add sifted powdered sugar one cup at a time, beating on low. Add vanilla, salt, and 2 tablespoons heavy cream. Beat on medium-high for 3-4 minutes until light and fluffy. Adjust consistency with remaining cream or more powdered sugar as needed.
  8. Once cupcakes are completely cool, frost with a generous swirl of frosting using a piping bag or offset spatula.
  9. For spiderweb design: Place about ¼ cup of frosting in a small piping bag with a tiny hole. Pipe 3-4 concentric circles on each frosted cupcake. Use a toothpick to gently drag from the center outward through all circles, repeating 6-8 times around the cupcake. Optionally add a plastic spider or pipe a spider with black decorating gel.

Notes

Room temperature ingredients are crucial for proper emulsification. Don’t overmix the batter. The coffee enhances chocolate flavor without making cupcakes taste like coffee. Chill frosted cupcakes before serving for best results. Practice spiderweb technique on a plate first. Cupcakes taste even better the next day.
