  • 2 pounds frozen fully-cooked meatballs (preferably Rosina or Trader Joe’s)
  • 1 tablespoon olive oil (for browning, optional)
  • 1 cup champagne or sparkling wine (dry or semi-dry, like Prosecco or Cava)
  • 1 ½ cups chili sauce (Heinz brand recommended)
  • 1 cup grape jelly (Welch’s or store brand)
  • 2 tablespoons brown sugar, packed (light or dark)
  • 2 tablespoons soy sauce (low-sodium preferred)
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • Pinch of red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley or chives, chopped (for garnish, optional)
  • Toasted sesame seeds (for garnish, optional)
  • Extra champagne for toasting (optional)

Instructions

  1. In a large skillet or Dutch oven over medium heat, combine chili sauce, grape jelly, brown sugar, soy sauce, Dijon mustard, minced garlic, Worcestershire sauce, and red pepper flakes (if using). Whisk until jelly melts and sauce is smooth, about 3-4 minutes.
  2. Slowly pour in the champagne while stirring. Let the sauce come to a gentle simmer and cook for 5-7 minutes, stirring occasionally, until slightly thickened.
  3. Optional: In a separate skillet, heat olive oil over medium-high heat. Add frozen meatballs and cook for 3-4 minutes, turning occasionally, until browned on at least two sides.
  4. Add meatballs to the champagne sauce. Stir gently to coat. Bring to a low simmer, then reduce heat to medium-low. Cover and cook for 15-20 minutes, stirring halfway through. If using raw meatballs, cook until internal temperature reaches 165°F.
  5. Taste the sauce and adjust seasoning: add more soy sauce if too sweet, more brown sugar if too tangy, or extra red pepper flakes for heat. Let meatballs rest in sauce for 5 minutes off heat before serving.
  6. Transfer to a serving bowl or keep warm in a slow cooker. Garnish with fresh parsley or chives and sesame seeds if desired. Serve with toothpicks or a slotted spoon.

Notes

For a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir in during the last 30 minutes. Make sauce up to 3 days ahead for easier entertaining. Leftovers keep in the fridge for up to 4 days and freeze for up to 3 months. For gluten-free, use certified GF meatballs and tamari instead of soy sauce.
