This Quick Apple Cider Mimosa with Cinnamon Sugar Rim is a festive, 5-minute drink that feels like a celebration. Made with just apple cider, champagne or prosecco, and a spiced rim, it’s perfect for fall gatherings or a cozy treat any day.

  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon honey or maple syrup
  • 1/2 cup chilled apple cider
  • 1/2 cup chilled champagne or prosecco
  • Optional: 1 tablespoon apple brandy or bourbon

Instructions

  1. Prepare the cinnamon sugar mixture: In a small shallow dish, combine 2 tablespoons of granulated sugar with 1 teaspoon of ground cinnamon. Mix until evenly distributed.
  2. Prepare your glass: Pour about 1 tablespoon of honey or maple syrup onto a separate small dish. Dip the rim of your champagne flute or wine glass into the honey, rotating gently until the entire rim is coated with a thin, even layer.
  3. Coat the rim: Immediately dip the rim into the cinnamon sugar mixture, pressing gently and rotating to coat evenly. Lift straight up and tap gently to remove excess. Let set for about 30 seconds.
  4. Add the apple cider: Pour 1/2 cup of chilled apple cider into the prepared glass. If using apple brandy or bourbon, add it now.
  5. Top with bubbles: Slowly pour 1/2 cup of chilled champagne or prosecco down the side of the glass to preserve bubbles and prevent foaming.
  6. Garnish and serve: Add a thin apple slice or cinnamon stick if desired. Serve immediately.

Notes

Chill glasses in the freezer for 10-15 minutes before starting to keep bubbles active longer. Do not stir the mimosa to preserve carbonation. For a non-alcoholic version, substitute sparkling apple cider or ginger ale. For a vegan version, use maple syrup instead of honey.
