Ingredients

  • 6–8 ounces Genoa salami
  • 4–6 ounces prosciutto, thinly sliced
  • 4 ounces soppressata or capicola (optional)
  • 4–6 ounces sharp cheddar or aged gouda, cubed
  • 4–6 ounces brie or camembert, cut into wedges
  • 4 ounces goat cheese or garlic herb cheese
  • 1/2 cup red grapes, washed and dried
  • 1/2 cup fresh cranberries
  • 1/4 cup dried apricots or figs
  • Fresh rosemary sprigs
  • 1/2 cup mixed nuts (roasted almonds and pecans)
  • 1/2 cup crispy breadsticks or grissini
  • 1 cup assorted crackers (water crackers and rosemary crackers)
  • Honey or fig jam (for serving)
  • Star-shaped cookie cutter (optional)
  • Whole star anise or cinnamon sticks (optional)

Instructions

  1. Prep Your Board (2 minutes): Place your large round board on your work surface. Ensure it’s clean and dry.
  2. Create the Wreath Base (3 minutes): Arrange fresh rosemary sprigs in a circular ring around the outer edge of the board, overlapping slightly to form a continuous ‘pine’ base.
  3. Place the Small Bowl (1 minute): Set a small bowl of honey or fig jam in the center of the board to create the donut shape.
  4. Add the Cheese (4 minutes): Arrange cheeses evenly around the wreath, varying shapes (wedges, cubes, rounds). If using a cookie cutter, press a star out of cheddar and place near the top.
  5. Make the Salami Roses (5 minutes): Fold 5-6 salami slices in half, then in half again to form tight quarter-circles. Arrange these in a small circle with rounded edges facing out to form a rose. Make 3-4 roses and place evenly around the wreath.
  6. Fold the Prosciutto (3 minutes): Gently scrunch prosciutto slices into loose ribbons or small piles. Place in gaps between salami roses and cheeses.
  7. Fill in the Gaps (5 minutes): Fill empty spaces with fruits, nuts, and crackers. Tuck red grapes in small clusters, sprinkle cranberries, add dried apricots and figs, scatter almonds and pecans, and tuck breadsticks and crackers at angles.
  8. Final Touches (2 minutes): Check for empty spaces and fill with extra cranberries or nuts. Drizzle honey over brie or goat cheese. Add star anise or cinnamon sticks for decoration.

Notes

Take cheeses out of fridge 20 minutes before assembling for best flavor. Add crackers right before serving to keep them crunchy. The board can be assembled up to 4 hours in advance and refrigerated; remove 20 minutes before serving. Leftovers keep 2-3 days in an airtight container.
