Quick Cranberry Brie Bites: Easy Puff Pastry Appetizer

These quick cranberry brie bites with puff pastry are buttery, salty, sweet, and come together in about twenty minutes flat. Perfect for last-minute guests or a simple weeknight treat.

  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese
  • 1/3 cup cranberry sauce
  • 1 large egg
  • 1 tablespoon water
  • Fresh rosemary or thyme sprigs (optional)
  • Flaky sea salt (optional)
  • Honey drizzle (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Gently unfold the thawed puff pastry on a lightly floured surface. Cut into 9 equal squares (3×3 grid) using a sharp knife or pizza cutter.
  3. Place the squares on the prepared baking sheet, spacing them about an inch apart.
  4. Cut the cold brie into small cubes, about 1/2 inch each. Leave the rind on.
  5. Place one cube of brie in the center of each pastry square. Spoon about 1 teaspoon of cranberry sauce on top of the brie.
  6. In a small bowl, whisk together the egg and water. Brush the edges of each pastry square with the egg wash.
  7. Bake for 14 to 16 minutes, until the pastry is puffed and golden brown and the brie is melted and bubbly.
  8. Let cool on the baking sheet for about 5 minutes before serving. Garnish with fresh herbs, flaky sea salt, or a drizzle of honey if desired.

Notes

Keep puff pastry cold for best flakiness. Do not overfill bites. For make-ahead, assemble without egg wash and refrigerate up to 4 hours, or freeze for up to a month. Reheat in a 350°F oven for 5 minutes.
