Instructions

  1. Make the Marinade: In a large mixing bowl, whisk together olive oil, soy sauce, honey, minced garlic, smoked paprika, cumin, pepper, and salt. Reserve 2 tablespoons of this mixture in a small bowl and set aside.
  2. Prep and Marinate the Chicken: Place chicken breasts on a cutting board. If uneven, butterfly or pound to about ¾-inch thickness. Pat dry with paper towels, then add to the bowl with the marinade. Coat evenly and let rest at room temperature for 15 minutes.
  3. Cook the Chicken: Heat a large skillet over medium-high heat. Place chicken in a single layer and cook for 5-6 minutes without moving. Flip and cook for another 5-6 minutes until internal temperature reaches 165°F. Let rest on a cutting board for 5 minutes.
  4. Slice and Toss with Reserved Marinade: Slice the chicken against the grain into strips or bite-sized pieces. Toss with the reserved 2 tablespoons of marinade.
