Quick Maple Roasted Brussels Sprouts with Bacon

Crispy, caramelized Brussels sprouts with smoky bacon and sweet maple syrup. A quick and easy side dish that’s perfect for weeknights or holiday feasts, ready in under 30 minutes.

  • 1 ½ pounds Brussels sprouts, trimmed and halved
  • 4 slices thick-cut bacon, cut into ½-inch pieces
  • 3 tablespoons pure maple syrup
  • 2 tablespoons olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper, freshly ground
  • 1 tablespoon balsamic vinegar (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rinse Brussels sprouts and pat completely dry. Trim stem ends and remove any yellow leaves. Cut each sprout in half lengthwise; quarter any large ones for even size.
  3. Using kitchen shears, cut bacon into ½-inch pieces.
  4. Spread bacon pieces in a single layer on a rimmed baking sheet. Bake for 5 minutes to render fat.
  5. While bacon cooks, toss Brussels sprouts with olive oil, salt, and pepper in a mixing bowl until well coated.
  6. Remove baking sheet from oven. Add seasoned sprouts and toss with bacon and rendered fat. Spread in a single layer, cut-side down if possible.
  7. Roast for 15 minutes without opening the oven door.
  8. Remove sheet from oven. Flip sprouts with a spatula or tongs. Drizzle maple syrup evenly over everything and toss gently. Spread back into a single layer.
  9. Return to oven and roast for another 10-12 minutes, until sprouts are deep golden brown with caramelized edges and bacon is crispy.
  10. If using balsamic vinegar, drizzle over hot sprouts immediately after removing from oven and toss once more.
  11. Let rest for 2 minutes before serving warm.

Notes

Don’t overcrowd the pan—sprouts need space to roast, not steam. Arrange cut-side down for best caramelization. Add maple syrup halfway through to prevent burning. For extra crispiness, broil for 1-2 minutes at the end, watching closely. Leftovers keep in the fridge for up to 4 days; reheat in oven or air fryer for best texture.
