A quick and easy overnight oats recipe with peanut butter and protein powder that creates a creamy, pudding-like texture. Perfect for busy mornings, this no-cook breakfast takes just 5 minutes of prep and delivers 35g of protein per serving.

  • 1/2 cup (50g) old-fashioned rolled oats
  • 1/2 cup (120ml) milk of choice (whole milk recommended)
  • 1/4 cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) creamy peanut butter
  • 1 scoop (about 30g) chocolate or vanilla protein powder
  • 1 tablespoon (15ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional but recommended)
  • Pinch of sea salt

Instructions

  1. Grab a wide-mouth mason jar or airtight container (16 oz or larger).
  2. Add dry ingredients first: 1/2 cup rolled oats and 1 tablespoon chia seeds (if using).
  3. Add 1 scoop (about 30g) protein powder. Break up any clumps with a spoon.
  4. Add 2 tablespoons creamy peanut butter. If cold, microwave for 10 seconds to soften.
  5. Add 1/4 cup plain Greek yogurt.
  6. Drizzle in 1 tablespoon maple syrup or honey.
  7. Pour in 1/2 cup milk of choice.
  8. Add a pinch of sea salt.
  9. Stir everything together thoroughly until completely combined, scraping the bottom and corners.
  10. Seal the container and refrigerate for at least 4 hours, preferably overnight (about 8 hours).
  11. In the morning, stir well. If too thick, add a splash of milk. Serve cold or at room temperature with desired toppings.

Notes

For best texture, use old-fashioned rolled oats (not quick or steel-cut). Different protein powders absorb liquid differently; plant-based proteins may require extra milk. The oats taste even better on day 2. Toppings like sliced banana, berries, chopped nuts, or extra peanut butter are recommended. For a warm version, microwave for 45-60 seconds or heat on stovetop.
