Instructions

  1. Make the champagne reduction: Pour ½ cup champagne into a small saucepan with 1 teaspoon sugar. Bring to a gentle simmer over medium heat, then reduce heat to low. Let it bubble until reduced by half, about 8-10 minutes, to get roughly ¼ cup concentrated syrup. Set aside to cool completely.
  2. Preheat oven to 350°F. Line a 12-cup muffin tin with paper cupcake liners.
  3. Whisk dry ingredients: In a medium bowl, combine flour, baking powder, and salt. Whisk thoroughly to aerate and distribute evenly. Set aside.
  4. Cream butter and sugar: In a large bowl, beat softened butter and granulated sugar on medium speed until light and fluffy, about 3-4 minutes. Scrape down sides as needed.
  5. Add eggs and vanilla: Beat in eggs one at a time, fully incorporating each before adding the next. Add vanilla extract and beat until combined.

Add another third of flour, then remaining champagne reduction, then final third of flour. Stop mixing as soon as flour disappears; fold in any remaining streaks gently with a spatula.
  7. Fold in strawberries: Gently fold chopped strawberries into batter using a rubber spatula. Do not overmix.
  8. Fill cupcake liners: Divide batter evenly among 12 liners, filling each about two-thirds full. Bake for 18-22 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs. Tops should be golden and spring back when touched.
  9. Cool completely: Let cupcakes cool in pan for 5 minutes, then transfer to a wire rack to cool completely before frosting.
  10. Make rose buttercream: Beat softened butter and cream cheese on medium speed until smooth and creamy, about 2 minutes. Gradually add sifted powdered sugar, one cup at a time, beating on low. Add heavy cream, rose water, vanilla extract, and pinch of salt. Increase speed to medium-high and beat 3-4 minutes until light and fluffy. Add pink gel food coloring if desired.
  11. Frost and garnish: Transfer buttercream to a piping bag fitted with a star tip. Pipe a generous swirl onto each cooled cupcake. Top with a fresh strawberry slice, sparkling sugar, and edible rose petals if using. Serve immediately or refrigerate.
