A quick and easy fall cocktail bar featuring sparkling apple cider, dry Prosecco, and fresh garnishes like apple slices, cranberries, and rosemary. Perfect for weeknight gatherings or festive occasions.

  • 1 bottle (750 ml) Prosecco or dry sparkling wine, chilled
  • 23 apples (Honeycrisp and Granny Smith), thinly sliced
  • 1 cup fresh or frozen cranberries
  • 68 cinnamon sticks
  • 46 fresh rosemary sprigs
  • 1/2 cup pomegranate seeds
  • 46 whole star anise pods
  • 2 tablespoons honey or maple syrup
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Prep the garnish bar: Wash and slice apples into thin rounds (about 1/4-inch thick). Toss with lemon juice if prepping ahead. Rinse cranberries and pomegranate seeds. Arrange apple slices, cranberries, pomegranate seeds, cinnamon sticks, rosemary sprigs, and star anise in small bowls.
  2. Make the cinnamon sugar rim: Mix 1/4 cup granulated sugar with 1 teaspoon ground cinnamon on a small plate. Pour a thin layer of honey or maple syrup on another plate. Dip each glass rim into the honey, then into the cinnamon sugar. Set aside to set.
  3. Chill everything: Ensure sparkling wine and apple cider are well-chilled. If needed, place in freezer for 10-15 minutes (but don’t forget them).
  4. Set up the bar: Arrange chilled bottles, garnish bowls, and rimmed glasses on a tray or counter.
  5. Assemble the mimosa: Each person adds a few apple slices, cranberries, a cinnamon stick, and a rosemary sprig to their glass. Fill halfway with sparkling apple cider, then top with Prosecco. Stir gently with the cinnamon stick.
  6. Serve immediately: Enjoy while bubbles are fresh. Garnishes will infuse flavor as the drink sits.

Notes

Don’t skip chilling the wine and cider—warm bubbles go flat fast. Pour cider first, then wine, to control fizz. Use a dry Prosecco or Cava to balance sweetness. Prep garnishes up to 24 hours ahead; keep apple slices in lemon water. For a non-alcoholic version, use two bottles of sparkling cider. For a lower-sugar option, use dry wine and sugar-free cider.
