A dense, fudgy banana bread that tastes like a brownie, made with wholesome ingredients like whole wheat pastry flour, dark chocolate chips, and walnuts. Perfect for breakfast or a guilt-free dessert.

Ingredients

Scale
  • 3 large ripe bananas, mashed (about 1 ½ cups)
  • ⅓ cup coconut oil, melted (or melted butter)
  • ½ cup maple syrup
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ¾ cups whole wheat pastry flour (or all-purpose flour)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ cup dark chocolate chips (at least 70% cocoa)
  • ½ cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center. Line your 9×5-inch loaf pan with parchment paper, leaving some overhang on the long sides for easy lifting. Lightly grease the exposed sides with coconut oil.
  2. In your large mixing bowl, add the three ripe bananas. Use a fork or potato masher to mash them until they’re mostly smooth with a few small lumps. You want about 1 ½ cups.
  3. To the mashed bananas, add the melted coconut oil (make sure it’s not hot—just warm), maple syrup, eggs, and vanilla extract. Whisk everything together until smooth and well combined.
  4. In a small bowl, whisk together the whole wheat pastry flour, baking soda, salt, and cinnamon.
  5. Add the dry ingredients to the wet ingredients. Use your rubber spatula to fold gently—just until no streaks of flour remain. Do not overmix.
  6. Add the dark chocolate chips and chopped walnuts. Fold them in with just a few strokes. Reserve a handful of each to sprinkle on top for a pretty finish.
  7. Transfer the batter to your prepared loaf pan. Use the spatula to spread it evenly. Sprinkle the reserved chocolate chips and walnuts on top, pressing them in gently so they stick.
  8. Place the pan in the preheated oven and bake for 50-60 minutes. At the 45-minute mark, check on it. The bread is done when a toothpick inserted into the center comes out with a few moist crumbs—not wet batter. If the top is browning too quickly, tent loosely with aluminum foil for the last 15 minutes.
  9. Let the bread cool in the pan for 15 minutes. Then use the parchment paper to lift it out and transfer to a cooling rack. Let it cool completely before slicing.

Notes

For the most fudgy texture, use bananas that are practically liquid inside. If your bananas aren’t ripe enough, pop them in a 300°F oven for 15 minutes. For a nut-free version, swap walnuts with sunflower seeds or just add extra chocolate chips. This banana bread actually tastes better on day two.
