  • ½ cup (130g) creamy peanut butter (natural, no added sugar or oil)
  • ⅓ cup (80ml) honey
  • ¼ cup (45g) mini chocolate chips (semi-sweet or dark)
  • 2 tablespoons (14g) ground flaxseed
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

  1. Combine the dry ingredients. In a large mixing bowl, add 1 cup rolled oats, 2 tablespoons ground flaxseed, and ¼ teaspoon salt. Stir them together with a fork or whisk.
  2. Add the wet ingredients. Spoon ½ cup peanut butter into the bowl. Drizzle ⅓ cup honey over the top. Add 1 teaspoon vanilla extract. Don’t stir yet—just pile everything together.
  3. Mix thoroughly. Use a rubber spatula to fold everything together. Start from the bottom and scrape up, turning the bowl as you go. Keep mixing until no dry oats remain, about 2 minutes.
  4. Fold in the chocolate chips. Add ¼ cup mini chocolate chips and fold them in gently until evenly distributed.
  5. Let the mixture rest. Cover the bowl with a clean kitchen towel and let it sit for 5 minutes. This allows the oats to absorb moisture and firm up.
  6. Roll into balls. Line a baking sheet or plate with parchment paper. Using a 1-tablespoon cookie scoop or a spoon, portion out the mixture. Roll each portion between your palms to form a smooth ball. You should get about 16 to 18 balls.
  7. Chill before serving. Place the baking sheet in the refrigerator for at least 30 minutes (or freezer for 15 minutes) to firm them up.

Notes

Let the mixture rest for 5 minutes before rolling to allow oats to absorb moisture. If mixture is too sticky, chill for 15 minutes. If too dry, add a tablespoon of honey or a splash of milk. For uniform balls, use a 1-tablespoon cookie scoop. Store in refrigerator for up to 2 weeks or freeze for up to 3 months.
